It’s Girl Scout Cookie Season! I know I’m going against the grain, but Do-si-dos might be my all time favorite (I’m also partial to Samoas). March 1st is also National Peanut Butter Lovers Day, so I thought what better way to celebrate than with a cannabis version of these yummy peanut butter sandwich cookies?!
Cannabis Peanut Butter Sandwich Cookies

Ingredients
For the cookies
- 1/2 cup unsalted butter softened
- 1 tablespoon cannabis butter softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 egg
- 1 cup quick cook oats
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
For the filling
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter softened
- 1 1/2 cups powdered sugar
- 1 tablespoon milk
Instructions
- Preheat oven to 350 F
- In a medium-sized mixing bowl, combine the oats, flour, baking soda and salt. Whisk together and set aside.
- In a large mixing bowl, cream together the unsalted butter, cannabis butter, peanut butter and sugars until fluffy. Add vanilla and egg and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Drop dough by the tablespoon about 2 inches apart on a baking sheet lined with parchment paper.
- Bake for 10 minutes or until edges turn golden brown.
- Once the cookies are done baking, move them to a wire rack to cool.
- For the peanut butter filling, mix together all ingredients until well combined.
- Spread 1 tablespoon of filling on the backside of one cookie. Top with another cookie and press down gently.
