I make these cookies every year for the holidays. In fact, I actually made a video for these cookies last year too! My scheduled guest for this week had to cancel, so I was stuck without a recipe for the week (she was going to bring some of the ingredients), so last minute, I decided to whip up a batch of these. I already all of the ingredients on hand, and I’ve been meaning to make some anyway to give out to friends and neighbors. I guess it was kismet! Since I’ve already done this recipe on the channel before, I decided to switch up the ratio of the spices a little and try a new baking technique I saw online, baking the cookies in a muffin tin. They turned out like little cookie cups which are perfect for filling with cream cheese frosting, marshmallows, or anything else you could dream of. I can also see this muffin tin method working with something like a shortbread cookie, which would stay more flat during the baking process.
Cannabis Molasses Cookie Cups

Ingredients
- 2 1/4 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup brown sugar packed
- 1/2 cup unsalted butter softened
- 3 tablespoons cannabis butter softened
- 1 egg room temperature
- granulated sugar for decorating
Instructions
- Preheat oven to 375°F.
- In a medium bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt.
- Using an electric mixer with the paddle attachment, or a hand mixer beat the brown sugar and butters on medium speed for about 5 minutes until light and fluffy.
- Turn the mixer to low speed and add the egg and the molasses.
- With the mixer still on low, slowly add the dry ingredients and mix until combined.
- Scoop one tablespoon of dough into each cup of an ungreased muffin tin. (There is enough butter in the dough to keep the cookies from sticking). Gently press the cookie dough balls into each cup making an even layer and sprinkle with sugar.
- Bake for 10-12 minutes or until the cookies are slightly brown on top.
