Ingredients
For the cookies
1/2cupunsalted buttersoftened
1tablespooncannabis buttersoftened
1/2cupcreamy peanut butter
1/2cupgranulated sugar
1/2cuplight brown sugar
1 1/2teaspoonsvanilla extract
1egg
1cupquick cook oats
1cupflour
1/2teaspoonsalt
1/2teaspoonbaking soda
For the filling
1/2cupcreamy peanut butter
1/4cupunsalted buttersoftened
1 1/2cupspowdered sugar
1tablespoonmilk
Instructions
Preheat oven to 350 F
In a medium-sized mixing bowl, combine the oats, flour, baking soda and salt. Whisk together and set aside.
In a large mixing bowl, cream together the unsalted butter, cannabis butter, peanut butter and sugars until fluffy. Add vanilla and egg and mix well.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Drop dough by the tablespoon about 2 inches apart on a baking sheet lined with parchment paper.
Bake for 10 minutes or until edges turn golden brown.
Once the cookies are done baking, move them to a wire rack to cool.
For the peanut butter filling, mix together all ingredients until well combined.
Spread 1 tablespoon of filling on the backside of one cookie. Top with another cookie and press down gently.
Notes
Makes 15 cookie sandwiches. 1 dose = 1 cookie sandwich.
