Chewy Chocolate Cannabis Crinkle Cookies

Equipment

Ingredients

  • cups all-purpose flour
  • 1/2 cup cocoa powder
  • teaspoons baking soda
  • 1/2 teaspoons salt
  • 12 tablespoons unsalted butter melted and slightly cooled See above for substitution notes
  • 1 cup sugar
  • 2 tablespoons unsulphered molasses
  • 1 egg room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1/2 cup sugar for rolling

Instructions

  • In medium bowl whisk together flour, cocoa powder, baking soda, and salt.
  • In a large bowl, mix together the butter and sugar. Add the egg, vanilla extract, molasses, and espresso powder.
  • Stir the dry ingredients into the wet until just combined. Cover and chill dough for at least 1 hour.
  • When ready to bake, preheat oven to 350 degrees. Using a small cookie scoop, scoop dough into balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto parchment lined baking sheets.
  • Bake cookies, one sheet at a time, for 10-12 minutes, until cookies are puffed, centers are set and they are beginning to form cracks. Do not overbake. Leave on sheets until the bottoms are stiff and transfer to a wire rack to cool completely.

These cookies are so easy to make ahead (hello holidays!) and freeze extremely well, raw or baked! I actually love eating them frozen.
