Ingredients
1½cupsall-purpose flour
1/2cupcocoa powder
1½teaspoonsbaking soda
1/2teaspoonssalt
12tablespoonsunsalted butter melted and slightly cooledSee above for substitution notes
1cupsugar
2tablespoonsunsulphered molasses
1eggroom temperature
1teaspoonvanilla extract
1teaspoonespresso powder
1/2cupsugar for rolling
Instructions
In medium bowl whisk together flour, cocoa powder, baking soda, and salt.
In a large bowl, mix together the butter and sugar. Add the egg, vanilla extract, molasses, and espresso powder.
Stir the dry ingredients into the wet until just combined. Cover and chill dough for at least 1 hour.
When ready to bake, preheat oven to 350 degrees. Using a small cookie scoop, scoop dough into balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto parchment lined baking sheets.
Bake cookies, one sheet at a time, for 10-12 minutes, until cookies are puffed, centers are set and they are beginning to form cracks. Do not overbake. Leave on sheets until the bottoms are stiff and transfer to a wire rack to cool completely.

These cookies are so easy to make ahead (hello holidays!) and freeze extremely well, raw or baked! I actually love eating them frozen.
