Banana Cream Cookie Sandwiches

Ingredients

For the cookies:

  • 7 tablespoons unsalted butter softened
  • 1 tablespoon cannabis butter softened
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1-1/3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

For the banana cream:

  • 1/2 cup cold heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 small very ripe bananas mashed

Instructions

For the cookies:

  • Line 2 cookie sheets with parchment paper or a silicone baking mat and preheat oven to 350°F.
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well.
  • Drop by 1-1/2 tablespoonfulls 2 in. apart onto baking sheets and bake for 12-15 minutes or until edges are golden brown. Remove to wire racks to cool.

For the banana cream:

  • Whip the cream and powdered sugar together until soft peaks form. Then, fold in the mashed banana.
  • Let cookies cool completely. Spread the banana cream between two cookies and sandwich together.

Notes

These are best served chilled and even better when frozen! I also like to use the same size scoop for the whipped cream as I did to drop the cookies for the perfect cookie to filling ratio.
