Banana whipped cream sandwiched between two crispy vanilla cookies

Ingredients
For the cookies:
7tablespoonsunsalted buttersoftened
1tablespooncannabis buttersoftened
1cupsugar
1egg
1tablespoonvanilla extract
1-1/3cupsall-purpose flour
3/4teaspoonbaking powder
1/4teaspoonsalt
For the banana cream:
1/2cupcold heavy whipping cream
1/4cuppowdered sugar
2small very ripe bananasmashed
Instructions
For the cookies:
Line 2 cookie sheets with parchment paper or a silicone baking mat and preheat oven to 350°F.
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well.
Drop by 1-1/2 tablespoonfulls 2 in. apart onto baking sheets and bake for 12-15 minutes or until edges are golden brown. Remove to wire racks to cool.
For the banana cream:
Whip the cream and powdered sugar together until soft peaks form. Then, fold in the mashed banana.
Let cookies cool completely. Spread the banana cream between two cookies and sandwich together.

These are best served chilled and even better when frozen! I also like to use the same size scoop for the whipped cream as I did to drop the cookies for the perfect cookie to filling ratio.
