Peach season is here and I just bought a case of them at Costco. They were on sale. I couldn’t resist. So what can we make with a whole bunch of peaches? The first thing that came to my mind was peach cobbler! We’re going to make single serve portions in a muffin tin because (a) they’re cuter, (b) it takes less time to cook, and (c) it makes dosing way easier and more consistent.
Mini Peach Cobbler
Equipment
- Muffin tin
- Oven
- Stand or hand mixer
Ingredients
For the peaches:
- 1 diced peach approximately 1 cup (peel if desired)
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
For the batter:
- 4 Tablespoons butter total, melted – I’m substituting 1 T of cannabis butter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- ground cinnamon
- brown sugar
Instructions
- Preheat oven to 375°F and line a muffin tin with cupcake liners.
- Add the diced peaches, sugar and salt to a saucepan over medium heat, stirring occasionally until the sugar is dissolved. Remove from heat and set aside.
- Add 1 teaspoon melted butter to the bottom of each muffin cup.
- In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Put 2 tablespoons of batter inside each cupcake liner, on top of the melted butter.
- Divide diced peaches and syrup evenly on top of the batter in each tin, approximately 1 tablespoon each. Sprinkle cinnamon and brown sugar generously over the top.
- Bake for 15-20 minutes until tops begin to brown. Serve warm, with a scoop of vanilla ice cream!
