Baking with zucchinis is totally underrated. It keeps this bread so moist and I’ve always been a huge advocate in hiding vegetables wherever I can. This bread is so delicious with a little garlic butter or some melted cheese. You can never have enough cheese!
Cannabis Parmesan Zucchini Bread

- 3 cups all-purpose flour
- 3 tablespoons Parmesan cheese grated
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 large eggs room temperature
- 1 cup milk
- 1/3 cup sugar
- 1/3 cup butter melted
- 1 tablespoon cannabis butter melted
- 1 cup zucchini peeled and shredded
- 1 tablespoon onion grated
Instructions
- In a large bowl, combine the flour, cheese, salt, baking powder and baking soda.
- In another bowl, whisk the eggs, milk, sugar and both butters.
- Stir into dry ingredients just until moistened. Fold in zucchini and onion.
- Pour into a greased mini loaf pan or 9″x5″ loaf pan.
- Bake at 350° until a toothpick inserted in the center comes out clean, about 45 minutes for mini loaves or 1 hour for a 9″x5″ loaf.
- Cool for 10 minutes before removing from pan to a wire rack. Cut into 12 equal pieces.
