Warmer weather always makes me crave a fruity dessert. If you like banana cream pie or banana pudding, these single serve cookie sandwiches are for you! We’re smooshing banana whipped cream topping in between two crispy vanilla cookies. If bananas aren’t your thing, you can substitute a different fruit, or nothing at all! Whipped cream is a blank canvas so you could just as easily stir in diced strawberries, cinnamon, mini chocolate chips, sprinkles, you name it.



Banana Cream Cookie Sandwiches
Equipment
- Oven
- Baking sheet
- Stand or hand mixer
Ingredients
For the cookies:
- 7 tablespoons unsalted butter softened
- 1 tablespoon cannabis butter softened
- 1 cup sugar
- 1 egg
- 1 tablespoon vanilla extract
- 1-1/3 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
For the banana cream:
- 1/2 cup cold heavy whipping cream
- 1/4 cup powdered sugar
- 2 small very ripe bananas mashed
Instructions
For the cookies:
- Line 2 cookie sheets with parchment paper or a silicone baking mat and preheat oven to 350°F.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well.
- Drop by 1-1/2 tablespoonfulls 2 in. apart onto baking sheets and bake for 12-15 minutes or until edges are golden brown. Remove to wire racks to cool.
For the banana cream:
- Whip the cream and powdered sugar together until soft peaks form. Then, fold in the mashed banana.
- Let cookies cool completely. Spread the banana cream between two cookies and sandwich together.
